What is the last thing you learned?

The last thing I learned is how to bone out a whole deer! When you bone out an animal it means you remove all bones from the meat. It takes about three hours to do this. But it’s very interesting to know how to do so. I even learned how to sharpen my knives in a new way! The last hunt gave 15 animals and we all joined in on the bleeding out the animals, removed the inside organs and skinned the animals. Then we hang them up for riping! After some days we chop the animal in two parts and start boning out. We put the meat in to vacumpacked bags and freeze it. Before the last hunt i only have boned out a sheep many years ago, so this was really a learning experience for me. I asked if it was cool for them if I boned out these 15 animals due to my learning and need for the experience  and they all said yes! First the knives, then I washed my arms and hands, found a pair of rubbergloves suited for the job at hand and got in to it! The neck for tortilla meat, the front leg for soups, the shoulder and side for mincemeat. Then you have the filees on the back. Entrecôtes and steaks from the backleg and rump. In total it gives you about 65 kilos of deermeat just half an animal wich they paied me for the job! So all this winter we are eating wild meat instead of domestic meat! So much healthyer for us.
